Since 1910 the nougat factory “Zakynthos” is involved in the
production of traditional sweets of Zakynthos, especially nougat (mantolato)
and pasteli.
Faithful to the traditional way of making and always being careful about
the quality of products, Kotsoni family is trying to preserve a tradition
which begins from the time of venetian domination in the island (1485-1797).
Nougat is a sweet which has been brought from Venetian country.
It takes its name from the almond which in Italian is “mandorla”,
that’swhy
in traditional nougat is not allowed to use any other kind of dried fruit.
It is a sweet similar to chocolate, as it has to be always hard; for us
the hardness of nougat proves how fresh and well done it is.
Nougat,
except almonds, contains honey, little sugar and the white part of
eggs.
Nougat is produced in natural conditions of heat and humidity and,
at the same time, it has to be protected from these. It doesn’t
contain any preservative at all and you can keep it out of the fridge
for 10 days during the summer; it needs always to be protected from
humidity with nylon bags and if it will start to get soft, which means
that it change, it has to get immediately in to the fridge.
For as long as it remains hard you can eat it without fear.
In our factory the working of nougat and pasteli has been kept with
the traditional way; the machines just help the man and doesn’t
replace him, in fact, our patents have their origin from an old tradition
in order to give the wanted result.

Also pasteli is a typical sweet of Zakynthos, because except sesamo
also contain honey and almonds.
Pasteli is made in our shop, following the traditional handy way and
the rules of its preservation are exactly the same of nougat.
Coming to visit our shop, you’ll have
moreover
the opportunity to taste some of the most famous Greek wines (Robola,
Retsina, Amoudi…), our own production of local wine and some particular
liqueur like Tendura, made with cloves and cinnamon.
Ours liqueurs, local wine but especially nougat and pasteli are strictly
intertwined with Zakynthian tradition; a tradition which has the colour
and the smell of an ancient time that, despite the difficulties, always
will possess a sweet part of nostalgia in our hearts as every traditional
thing, everything which identifies with its place, in order to be preserved
in time, it must have principles and values…
